Two D415s on an Up Board should work, according to information provided by an Intel support agent in a recent discussion on this topic.
 
Aaeon® UP Board setup with 2x Intel® RealSense™ Depth Camera D415
 
Up Board isn't your only option though for multi-camera setups.  It should work with any computing device with an Intel or ARM processor chip that can have 2 or more cameras attached to it (whether directly to USB 3.x ports on the device or to a USB 3.x hub).
 
Regarding your wi-fi question ... it would not be practical to send camera data over wi-fi, as it requires some kind of cabling due to the large amount of camera data bandwidth that is sent through the cable.  And alternative solution may be to use USB cable extension, such as the industrial-grade solutions provided by Newnex that can carry RealSense data up to 100 m.

Accessing data from a D415 via WiFi is not possible, because there is too much data to transmit via wifi (especially when synchronizing multiple cameras). 

If a cable longer than 2m is required and would be more practical for your project, we recommend using USB3 repeaters, and not extension cables (here is one we have tested):

As far as computing boards go, Marty G. is right about being able to use any computing device with an Intel or ARM processing chip, so long as it has enough processing power.

Much appreciated your clarifications ... and also for sending the link to the Aaeon UP board...
I will run my tests with 2 cameras currently using USB3 repeaters ... but i'm thinking on trying later on to run some processing in the edge (using the capabilities for doing that inside the UP Board maybe....). This would avoid having to force RGB and Depth streams over cables ...
