FMC is designed for a board-to-board connections with one board as the "carrier" and one as the "mezzanine".  
 
The FMC standard defines a number of items that make are uni-directional like I2C PROM, Voltage Supplies, Clocks, MGTs, etcc that don't fit in well with trying to connect a cable from one carrier, like a ML605, to another carrier.
 
FMC modules such as the FMC-XM101 provide a way to be able to connect two carrier cards together over high performance cables.

No, there is no such thing as an "FMC" cable.
 
The FMC daughter board has some kind of cable connector which can be used to connect to another similar daughter board. But the cable itself is not an "FMC Cable."

Doubtful, since the connector is not designed for such use. You could always ask Samtec if there's an adapter board, or you could do what I've done -- have an adapter board fabricated.

If you are interface with an ADC or DAC that generally needs to be a high performance link, so these components should be placed on a FMC module.  There are several of these now available, or you could design one yourself.  It isn't clear to me how a "FMC cable" would be able to solve the problem of connecting the SP601 to these devices.
 
For GPIO, the FMC-XM105 card will meet all of your needs.
