    So after reading that and finally getting the demo app to run, it seems like these are the main differences (let me know if I am missing something):
 
1) The web version is the old HTTP server that was in Harmony <2.0. This is a stable web server, but didn't have the full underpinning to easily integrate things like WolfSSL to have encrypted web page connections.
2) The web_net version is the new style of HTTP server that Microchip has developed which adds dynamic variable substitution and server side includes. It also has better structure for dealing with encryption because it has static sockets when dealing with a client which dramatically reduces the overhead of doing HTTPS pages.
 
Is that the crux of it? It looks like for starting a new project people should probably learn the new web_net version of the server.

    Also, in case this helps someone else out, the reason I was having trouble seeing the sample web pages is because I was trying to access the IP address of my board directly. If you put in your address bar "x.x.x.x" it will automatically route to "http://x.x.x.x". Because this is not the encrypted address, the demo application will reject the connection. Instead make sure you access "https://x.x.x.x". The other way to access it is to just type "mchpboard_e" into the address bar. Do be aware that some routers or computers will not allow this style of address lookup. If it doesn't work use the Microchip TCPIP Discoverer tool in your Harmony directory to find the IP address of your board and connect to the IP directly with the HTTPS address.
