Are you use the output is "analog" ie an unsampled/unquantized value for which you need an adc (or similar sampling-quantization device) or are you getting just an N bit value for each pixel? If the interface is a regular camera interface (ie the adc is next to the sensor and you get its output) then you need to know what that electrical interface looks like. Some cameras have a parallel output ie you get N bits of data for each row (line) and line and frame valid signals. Other cameras give you a higher speed stream where you get 2 or 4 bits at a time to make the same row data.
