Using MPLAB X IPE, you can inject a unique serial number during mass production. This S/N will be automatically incremented as you program each device.
 
Some of the latest PICs like PIC16F15356 have a new memory section called DIA ( Device Information Area) which contains a factory unique number which can be read by the application software (see section 6 of the datasheet).
